Pastry Dough

  • 2 Cups A.P. Flour
  • ½ Cup of cold Butter diced
  • Pinch of Salt
  • About ½ cup of Ice Water
  • Mix flour and salt in a stand mixer with the paddle attachment on medium for a minute then slowly add the bits of butter a few at a time and mix until the mixture looks like cornmeal. Add the water a splash at a time until the mixture comes together.

    To blind bake roll out and place in a pie or tart shell and weight with pie weights or parchment paper and beans or rice.

    Bake at 375 convection for about 17 to 20 minutes until crust is golden brown.
