Oatmeal Chocolate Chip Cookies

Makes 7 to 8 dozen depending on size
  • 2 cups of unsalted butter
  • 2 firmly packed cups of brown sugar
  • 1 cup of granulated sugar
  • 2 teaspoons of vanilla extract

  • Blend all of the above at medium speed for about 5 minutes or until the texture is creamy.
  • 6 eggs
  • 3 cups of flour
  • 2 teaspoons of baking soda
  • 5-6 cups of rolled oats
  • 4-5 cups of semi-sweet chocolate chips

  • (All of the ingredients above, I prefer to hand mix into the mixture above as I find that they allow the cookies to raise better.) Start mixing the eggs, then flour and baking soda together, then the oats and finally the chocolate chips. After you have everything combined, let the completed mixture sit overnight in the refrigerator. Roll the dough into the size of a ping pong ball and place cookies on parchment or silpats lined sheet trays. Bake at 350 degrees on convection mode for about 10-11 minutes or until they are light brown.
